Scope & General Purpose

The Sushi Chef is responsible for daily prep work, sushi production during service (with support of the culinary team), and ordering in partnership with the Chef de Cuisine. This role requires a balance of creativity, leadership, and business acumen—guiding cooks to produce an exceptional product while maintaining consistency, precision, and efficiency.

  • Maintain exceptional standards of quality, precision, and consistency in all sushi and Japanese dish preparation.
  • Demonstrate respect for traditional Japanese culinary techniques while executing with efficiency and attention to detail.
  • Ensure proper handling, storage, and rotation of all seafood and sushi bar ingredients to preserve freshness and integrity.
  • Efficiently manage ordering, inventory levels, and pars for all fish, seafood, rice, and sushi-related products.
  • Maintain a clean, organized, and fully stocked sushi station to support seamless service execution.
  • Foster a collaborative environment, working effectively with chefs, kitchen staff, and service teams.
  • Demonstrate professionalism, discipline, and pride in craftsmanship at all times.
  • Contribute to a positive, respectful kitchen culture that values growth, learning, and operational excellence.
  • Maintain strict adherence to food safety, sanitation, and health standards.
  • Exhibit curiosity and commitment to continual learning within Japanese cuisine and culinary technique.


Core Responsibilities

  • Prepare sushi, sashimi, nigiri, maki, and other Japanese dishes with consistency, accuracy, and attention to presentation.
  • Order all fish, seafood, rice, dry goods, and related sushi bar products; manage inventory levels and maintain appropriate pars.
  • Receive, inspect, and properly store all deliveries to ensure product quality and compliance with standards.
  • Break down whole fish and portion seafood with precision and minimal waste.
  • Maintain cleanliness, organization, and readiness of the sushi station at all times.
  • Execute service efficiently while maintaining composure, speed, and quality during high-volume periods.
  • Ensure proper labeling, storage, and rotation of all products in accordance with food safety guidelines.
  • Support menu execution, seasonal changes, and new item rollouts as directed by culinary leadership.
  • Assist with general kitchen prep, cleaning, and operational support as needed.
  • Maintain all equipment, tools, and workspace in excellent condition.
  • Execute all opening and closing duties, including station setup, breakdown, and inventory checks.


Job Requirements

  • 4+ years of experience as a Sushi Chef, preferably in a leadership capacity
  • Strong knife skills and experience handling and preparing raw fish and seafood.
  • Foundational knowledge of Japanese cuisine preferred, including traditional ingredients, preparation techniques, and flavor profiles.
  • Strong attention to detail, organization, and cleanliness.
  • Ability to work efficiently and effectively in a fast-paced, high-volume kitchen environment.
  • Professional demeanor with strong teamwork and communication skills.
  • Understanding of food safety, sanitation standards, and proper product handling.
  • Ability to stand and work for extended periods and perform physically demanding tasks.
