REGIONAL DIRECTOR OF OPERATIONS Location: Los Angeles, CA | Compensation: $100,000 – $130,000

Reports To: Senior Director of Operations | Direct Reports: FOH and BOH Managers


Labor and Human Resources

  • Responsible for the management and coaching of all restaurant team members, maintaining brand standards, and fostering team morale.
  • Create staffing pars for each department and develop labor budgets for Owner approval.
  • Approve all staff schedules before they go live and review schedules each week to ensure any staff changes have been recorded and pars are being met. Identify and address any unnecessary overtime or spread of hours pay.
  • Maximize department efficiencies and reduce operational waste.
  • Address staff and guest concerns promptly and effectively, including HR as necessary.
  • Ensure all staff are complying with health and safety restaurant regulations.


Menus and Cost of Goods Sold

  • Manage and oversee kitchen teams to ensure COGS are within target percentages, with a focus on minimizing waste, excess purchases, and inventory.
  • Review all new menu items for accurate costing and profitability prior to submitting them for Owner approval.
  • Develop a COGS budget to be presented to and approved by Owners.
  • Ensure timely inventory counts are performed with alcohol inventories completed on the 1st of each month.


Service and Guest Experience

  • Ensure brand standards of service are maintained and exceeded consistently.
  • Ensure all Managers are interacting with guests to assess satisfaction and meet expectations.
  • Analyze guest feedback to continually improve service and exceed customer expectations.
  • Oversee delivery platform databases to ensure menu accuracy and correct pricing aligned with the POS system.
  • Review and adjust delivery times to optimize efficiency, especially during peak periods.
  • Continually review the cost of outside delivery programs and measure profitability versus an in-house delivery program.
  • Monitor voids, comps, and discounts daily to ensure they are within acceptable limits and address any discrepancies.


Catering & Events

  • Plan, coordinate, and staff all mobile events ensuring profitability and high quality of service.
  • Research and source new opportunities with a goal of signing at least 3 new events per year with a minimum profitability goal of 25%.
  • Work with the Director of Catering to boost catering sales including holiday parties and corporate events. Continually explore opportunities for both indoor and offsite catering.


Building and Departmental Supplies

  • Monitor the system for reviewing and approving purchases of departmental and general supplies.


Repairs, Maintenance and Cleanliness of Facilities

  • Responsible for ensuring the cleanliness of all facilities, including sidewalks if applicable. This includes restaurant cleaning, yard maintenance, HVAC servicing, oven cleaning, pest control, trash removal, equipment maintenance, and bathroom upkeep.
  • Manage overnight cleaners and porters to maintain the cleanliness of a first-class restaurant.
  • Ensure compliance with all Department of Health guidelines and requirements, maintaining an "A" DOH grade.
  • Coordinate with approved vendors for repair quotes to be approved by the Sr. Director of Operations.
  • Conduct regular inspections of the premises to ensure all maintenance and cleanliness standards are consistently upheld.
  • Maintain and manage the schedule for all license and permit renewals as required.


Additional Responsibilities

  • Work with the Director of Service, HR, and Controller to create written Standard Operating Procedures for all departments, covering labor pars, scheduling, payroll, COGS percentages, recipes, DOH guidelines, ordering procedures, tip pooling and distribution, end of shift duties, and POS system updates.
  • Work with the Controller to set up and implement the Operations side of Restaurant 365.
  • Coordinate with the Creative Department for any graphics or marketing pieces required.
  • Continually seek and pursue new opportunities and strategies for business growth.
  • Maintain up-to-date job descriptions for all positions and communicate any updates to HR for approval.
  • Provide periodic coverage of all services at all locations.
  • Travel may be required with the approval of the Owners.
  • Perform other responsibilities as deemed necessary and appropriate, or as directed by Owners for the benefit of the company.
