Job Description:
The General Manager will play a central role in leading day-to-day operations, driving guest experience, and fostering a positive, accountable team culture. The General Manager is
operationally strong, but also deeply passionate about people—someone who leads with empathy, consistency, and a commitment to unreasonable hospitality. This role requires close collaboration
with Ownership, who are actively involved in day-to-day operations and leadership. Together, we will cultivate a workplace culture that celebrates learning, inspires excellence, and builds genuine connections—with our team, our guests, and our community. In addition, the General Manager will ensure smooth, efficient operations across all areas of the business—including service, staffing, systems, financials, catering, and wine retail. This role requires a thoughtful, hands-on leader who is equally passionate about hospitality, leadership, and operational precision.
Requirements:
- A minimum of 5 years in a General Manager role in fine dining establishments, particularly those with Michelin awards or similar recognition.
- An unparalleled passion for hospitality and taking care of others, both guests and team members alike.
- Infectious positive attitude, meticulous attention to detail, excellent organizational skills, and very strong communication abilities. Candidate must have the ability to bring the teams together through excellent communication and people skills.
- Experience managing reservation systems, including day-to-day availability and reservation scheduling.
- High Proficiency in handling reservations, email communications, and private event inquiries.
- Solid floor experience, including serving and recommending wine bottles, wine by the glass (BTG), and wine pairings.
- Substantial wine knowledge with the ability to perform wine service and has the knowledge to discuss grape varieties, wine regions, and prominent wine appellations.
- In depth spirits knowledge and bar operations.
- Exceptional presentation and interpersonal skills.
- Extensive and expanding knowledge of the restaurant industry within Dallas, nationally and globally.
- A genuine passion for the hospitality business and a continual curiosity about the food, wine and spirits world.
- Good Microsoft Office skills, including Excel, PowerPoint, and Word, and excellent printing skills.
- Proficiency in other computer skills such as Toast, BinWise, Resy, and Adobe.

Partner with Ownership to oversee daily operations and ensure smooth service across all shifts.
- Delegate effectively to leads and team members when appropriate, promoting shared Ownership and clarity.

- Collaborate with Ownership to lead daily lineups, finding creative ways to make them engaging, motivating, and fun.
- Conduct performance check-ins at 6 months and formal reviews at 1 year.

2. Guest Experience & Hospitality Oversight:
- Build genuine relationships with guests through unreasonable and enlightened hospitality.
- Partner with Ownership to oversee service operations in both the quick-service sandwich shop and the full-service restaurant
- Collaborate with Ownership, Chef and Head Bartender to ensure a cohesive, hospitality- driven beverage and service experience. Find new, thoughtful and creative experiences for the guest experience.
- Maintain a constant, engaged presence on the floor, upholding and modeling our standards of hospitality and service.
- Champion the guest experience by thoughtfully listening to and acting on guest feedback to continually improve service and connection.
3. Operational Oversight:
- Partner with Ownership to manage opening and closing procedures for both sides of the business.
- Oversee scheduling, inventory, and ordering; collaborate with the Chef, Head Bartender, and Ownership to ensure proper maintenance across the kitchen, bar, FOH, and wine and market retail.
- Work with Ownership to lead and manage the catering operations, ensuring seamless coordination with the kitchen and dining room teams.
- Ensure compliance with all health, safety, liquor licensing, and labor regulations.
- Work closely with Ownership, Chef, and Head Bartender to implement and refine systems, standards of excellence, and operational efficiencies, while maintaining our company culture.
- Lead weekly manager meetings and maintain clear communication across departments.
- Prepare detailed daily and nightly briefings to keep the team informed and aligned.
- Maintain an annual holiday calendar to ensure seamless execution of all holiday-related initiatives.
- Keep training materials, onboarding procedures, and SOPs current as systems evolve.
- Manage and maintain the POS system, including updates, replacements, and necessary adjustments.
- Demonstrate a strong understanding of the reservation platform; build and manage the reservation book in a way that balances flow, maximizes covers, and upholds our hospitality standards.
- Collaborate with the Chef and Head Bartender to maintain up-to-date menu descriptions for food, cocktails, and wines by the glass, including updates related to allergies and dietary restrictions.
- Rotate closing responsibilities with other team members; ensure all closing procedures are followed, the facility is secured, and all systems (gas, hood, appliances) are properly shut down.
- Oversee upkeep of the physical space, service tools, and all CGS; work with the Head Bartender to maintain proper quantities of all CGS while staying within budget.
- Maintain all office supplies and ensure they remain stocked and within budget.
4. Financial Management:
- Monitor daily sales, labor costs, and key performance metrics to ensure financial health and operational efficiency.
- Partner with Ownership and the Head Bartender to conduct monthly inventory of wine, spirits, and other beverages, maintaining COGS at or below target percentages.
- Prepare and present monthly inventory reports detailing sales, variances, COGS, and actionable insights for improvement.
- Work with the Chef and Head Bartender to manage vendor relationships, negotiate pricing, and control costs—while upholding quality standards.
- Collaborate with Ownership, Chef, and Head Bartender on budgeting, forecasting, and strategic growth planning.
- Attend monthly P&L meetings and maintain a strong working knowledge of the restaurant’s profit and loss statement to ensure informed decision-making and financial accountability.
5 Wine & Retail Program Oversight:
- Collaborate with Ownership to support a dynamic, creative, and profitable wine program.
- Drive business to both the wine retail shop and the restaurant through deep product knowledge, guest relationships, education, and community outreach.
- Partner with Ownership and the Head Bartender to design and implement a team member education program, including weekly tastings and monthly training sessions.
- Ensure retail displays are visually engaging with accurate pricing and uphold the standards of the business.
- Work with Ownership to plan and execute wine-focused events, such as weekly tastings and winemaker dinners, to engage guests and boost sales.
- Find creative ways to cross-promote wine retail offerings and the restaurant’s wine list, strengthening the connection between both sides of the business.
- Collaborate on the development and ongoing success of a Wine of the Month Club, with a focus on guest engagement and retention.
6. Marketing & Community Engagement:
- Collaborate with Ownership, the Chef, and Head Bartender on events, marketing campaigns, and strategic partnerships that support the restaurant’s vision and goals.
- Maintain brand integrity across all channels—including social media, in-house materials, and every guest interaction.
- Support and participate in neighborhood and community events to build strong local relationships and foster a loyal following.
- Help cultivate a culture of community by actively engaging with local organizations and initiatives, positioning the restaurant as a trusted and valued neighborhood pillar.
7. Strategic Collaboration with Ownership:
- Meet regularly with Ownership to align on goals, address challenges, and help drive the long-term vision of the business.
- Implement and continuously refine operational strategies that support growth while preserving the company’s culture and core values.
- Work in close partnership with Ownership and the team, sharing insight and feedback from daily operations to support thoughtful, guest-centered decision-making and continuous improvement.
