A globally recognized hospitality brand is seeking a procurement manager to oversee sourcing, purchasing, and supplier relationships for its U.S. and international locations. This role presents a unique opportunity to work with long-established, direct relationships with fishermen and farmers in the Mediterranean, ensuring the highest quality ingredients, particularly Mediterranean fish and seafood. The procurement manager will be instrumental in maintaining the brand’s commitment to quality, sustainability, and operational efficiency by managing supplier partnerships, optimizing purchasing strategies, and ensuring seamless supply chain operations.

The ideal candidate has a strong background in hospitality, food and beverage procurement, or supply chain management with experience in sourcing premium ingredients. This individual should be highly organized, analytical, and capable of building strong relationships with suppliers while ensuring cost-effectiveness and operational excellence.


Key Responsibilities

Sourcing & Supplier Management

  • Maintain and strengthen direct relationships with fishermen, farmers, and purveyors, ensuring the highest quality ingredients and products.
  • Oversee sourcing and purchasing of Mediterranean seafood, produce, and private-label offerings, ensuring freshness, authenticity, and sustainability.
  • Identify and establish new supplier partnerships to support growth and expansion.
  • Negotiate contracts and pricing with vendors to secure optimal terms without compromising quality.
  • Ensure compliance with food safety regulations, sustainability standards, and company policies across all supplier relationships.

Purchasing & Inventory Management

  • Develop and implement procurement strategies to optimize purchasing while maintaining cost efficiency.
  • Collaborate with culinary and operations teams to forecast demand and ensure consistent supply of key products.
  • Monitor inventory levels, purchasing trends, and supplier performance to mitigate shortages and reduce waste.
  • Oversee purchasing systems and processes, ensuring seamless coordination between locations and suppliers.

Logistics & Supply Chain Coordination

  • Manage international and domestic logistics, shipping, and customs clearance for imported products, particularly Mediterranean seafood and specialty ingredients.
  • Ensure timely and efficient delivery of products while minimizing delays and disruptions.
  • Work closely with restaurant operations teams to ensure seamless coordination between procurement and daily needs.

Cost Management & Quality Assurance

  • Continuously evaluate and optimize cost structures while maintaining the highest quality standards.
  • Implement quality control measures to ensure all ingredients and products meet company specifications.
  • Analyze market trends, pricing fluctuations, and supplier performance to inform purchasing decisions.

Qualifications & Experience

  • 5+ years of procurement, purchasing, or supply chain experience in the hospitality, restaurant, or food and beverage industry.
  • Strong knowledge of premium seafood, Mediterranean cuisine, and specialty ingredient sourcing preferred.
  • Experience working with international suppliers, import logistics, and direct sourcing from purveyors.
  • Strong negotiation skills with a track record of securing favorable supplier agreements.
  • Highly organized with the ability to manage multiple sourcing channels and procurement operations.
  • Strong analytical skills with proficiency in inventory management and purchasing software.
  • Excellent communication and relationship-building skills, both internally and externally.
  • Knowledge of food safety regulations, sustainability practices, and industry standards.
