Regional Director of Operations – EMEA (London, Athens & Dubai)

Location: Based in London, UK | Extensive Travel to Athens & Dubai

Reports to: Chief Operating Officer (COO) and Chief Executive Officer (CEO)


A leading global hospitality brand, internationally celebrated for its excellence in fine dining, is seeking a strategic and accomplished Regional Director of Operations to oversee restaurant operations in London, Athens, and Dubai. Based in London, this executive role requires extensive international travel to ensure operational consistency, team development, and outstanding guest experiences across the region.

Reporting directly to the COO and CEO, the Regional Director will play a key leadership role in shaping the growth and performance of one of the world’s most respected hospitality portfolios.


Key Responsibilities

Operational Strategy & Leadership

  • Oversee daily operations and long-term strategy for restaurants in London, Athens, and Dubai.
  • Support General Managers in maintaining brand standards and delivering on financial and service goals.
  • Lead the regional rollout of operational initiatives, including expansion and openings.
  • Monitor KPIs and ensure excellence in execution, service, and operational discipline across all locations.

Team Development & Performance

  • Recruit, train, and mentor high-performing leadership teams in each market.
  • Drive team accountability and performance through coaching and structured development plans.
  • Cultivate a strong, collaborative culture aligned with brand values.

Cross-Functional Collaboration

  • Work closely with culinary, HR, marketing, and finance leaders to align operations with broader company goals.
  • Ensure compliance with local labor, safety, and hospitality regulations.
  • Act as the bridge between on-site leadership and global executive teams.

Financial & Business Management

  • Own regional P&L, forecasting, and budget management across all locations.
  • Identify and implement operational efficiencies and cost savings.
  • Oversee procurement, vendor management, and supply chain consistency across international markets.

Qualifications & Experience

  • 10+ years of progressive hospitality leadership, with multi-unit oversight across international markets.
  • Proven success in upscale or fine dining environments is essential.
  • Experience launching and scaling new units across diverse regions.
  • Exceptional leadership, communication, and cross-cultural management skills.
  • Strong financial acumen, including budget and P&L ownership.
  • Must be based in London and willing to travel 60–75% of the time to Athens and Dubai.
